The chef, Ramesh Bundi, does modern interpretations of Indian cuisine: marinated tandoori salmon with green herbs, mustard and pan-seared scallops; lamb cutlet encrusted with curry leaf and red onion, with rose petal and lamb jus and saffron puri (a deep-fried unleavened bread); and coconut cremeux with Granny Smith jelly, cucumber and mint ice cream.

Palais de Barbizon (St Anne Road, Chamarel village) – located on the southeastern part of the island, this creole restaurant has been in business for over 15 years. The menu is based on fresh, local products, all picked from the owner’s own vegetable garden or those of her neighbors (a hit for organic diners). Vegetables are the stars of the owner’s daily cuisine, featuring heavily in dishes like banana peel and salted fish curry, creamed cassava, octopus and chayote fricasee, or cassoulet prepared in the Mauritian way. Seasonally, these may be accompanied by curries made of chicken from the yard, freshwater langoustine in a red sauce, venison or fish.
